INGREDIENTS
12 fresh scallops, 2 water-expanded dried mushrooms, 50g bamboo shoot, minced pork, an egg white, fried
groundnuts, chives, shredded ginger, garlic mousse, sesame oil, sugar, starch, salt, gourmet powder, soda
biscuit crumbs
RECIPE
- Shred the mushrooms and bamboo shoot into grains, smash the groundnuts by patting them with a knife, and
then mix them with the chives, shredded ginger, garlic mousse, minced pork, salt, gourmet powder, sesame oil,
sugar.
- Slightly pat the scallops to flatten them, coat them with a salty sauce, then stuff them with the mixture and
shape them into balls.
- Mix the egg white and the starch to make a paste, dip the scallop balls in the paste, then coat them with the
soda biscuit crumbs, finally saute them in hot oil until they look yellow.
