Ingredients: 1 mandarin fish about 750g, 150g crabmeat, 4 eggs, 10 cabbage hearts, 1,000g high stock, salt, gourmet powder, water chestnut powder, oil, pepper, ginger juice
Recipe:
- Kill the mandarin fish and remove the bones, skin, head and tail from the fish. Slice the fish and rinse them. Drain off water and make fish meat into a mousse. Add salt, gourmet powder, pepper, and egg white and water chestnut powder. Stir to mix them up.
- Put oil in the wok and when it is warm, put in mandarin fish mousse. Fry it till it is yellow. Make gluten with boiling water. Scald the gluten and cabbage hearts in boiling water and take them out.
