Poultry Dishes--Fried Pickled Duck's Lower Jaws

Ingredients: 10 duck heads, gourmet powder, dried red pepper, light soy, maltose, Shaoxing wine, ginger, chives

Recipe:

  1. Remove the upper part of the duck heads (only the lower jaws remained). Cut them into two parts each and wash them thoroughly. Put the jaws in the liquor made of gourmet powder, dried red pepper, light soy, maltose, Shaoxing wine, sugar, chives and ginger. Pickle for 3 hours.
  2. Fry the pickled duck jaws in heated oil with a strong fire till done. Remove and serve.
