Ingredients: 1 white tender duck about 750g, lotus seeds, shrimp meat, pork dices, chicken dices, green soybeans, duck gizzard dices, dried scallops, ham dices, bamboo shoot dices, dried mushrooms (xianggu), glutinous rice, chives, shredded ginger, Shaoxing wine, dark soy, salt, gourmet powder, sugar, salad oil, watered starch
Recipe:
- Remove the bones from the depilated duck and scald it in boiling water. Coat it with dark soy and let pickle for about half an hour in Shaoxing wine and gourmet powder.
- Saut¨¦ the duck gizzard dices, ham dices, bamboo shoot dices, dried mushrooms, chicken dices, pork dices with chives and shredded ginger. Steam the lotus seeds, dried scallops and glutinous rice till done respectively. Stir with the above seasonings to mix. After cooling down, stuff them into the duck's abdomen.
- Steam the duck with the abdomen sealed and downside for 2 hours. Saut¨¦ the green soybeans and shrimp meats till done. Put in watered starch to make a paste. Pour in done oil. Finally pour them on the duck.
