INGREDIENTS
1 crammed duck about 2.25kg, 12 thin wheat cakes, sweet wheat sauce, maltose, scallions
RECIPE
- Kill and depilate the duck, soak it in seasonings then gash it in the side to remove its intestines, after cleaning, hook it up and coat it with maltose.
- Hang the duck on the iron bar in the oven, start a strong fire, bake the back first, then up to whole body, rotate it during baking. When the colour changes and fat appears, bake it with a weak fire until it looks golden, oily and shiny, then take it out.
