Steamed Mandarin Fish Shaped Like Crab




INGREDIENTS

1 mandarin fish (1000-1500g), ham, water-expanded dried mushrooms, potato, carrot, egg, pickled chilis, fungus shreds, salt, gourmet powder, rice wine, vinegar, water chestnut powder, pepper, chives, ginger

RECIPE

  1. Remove the skin and bones of the mandarin fish, slice the meat, coat them with seasoning paste, chop the meat shreds into mousse, put in salt, gourmet powder, pepper, juice of chives and ginger, mix them up. Knife the steamed ham into matchstick-like shreds, mash the steamed potato.
