Saute Duck Meat (Shaped Like Lotus Flower)




INGREDIENTS

250g done duck meat, 50g dried mushrooms, 25g ham, 50g bamboo shoots, 50g shrimp meat, 2 egg whites, egg floss made from 2 eggs, 750g tomatoes, green soybeans, juice of leaves of green cabbage, salt, gourmet powder, sugar, pepper, juice of chive and ginger, rice wine, delicious soup, watered starch

RECIPE

  1. Knife the duck meat, ham, dried mushrooms into grains, saute them together with salt, gourmet powder, rice wine, pepper, sugar, juice of chive and ginger, then put in the delicious soup to braise them to boiling, add the watered starch to make paste, then place them on the egg sheet spreading in a dish, circle them with the egg floss.
  2. Knife the tomatoes into pieces shaped like lotus flower petals, circle the egg sheet with them to form a lotus flower.
  3. Make the shrimp meat into mousse, mix it with egg whites, juice of leaves of green cabbage, salt, gourmet powder, pepper, pour the mixture on the stamen of the lotus flower, set the green soybeans on it, then steam the dish in a food steamer for 2-3 minutes, take it out.
  4. Pour the paste made from the watered starch on the lotus flower.
