Mandarin Ducks & Lotus Flowers




INGREDIENTS

500g eggs, 50g chicken meat shreds, 25g agar, some river shrimps, squash, cucumber, various radishes, black moss, salt, gourmet powder

RECIPE

  1. Break the eggs, separate the whites and yolks, put them respectively in 2 bowls, put in salt, gourmet powder, beat them up, pour them in a vessel, steam them into cakes. Steam the watered agar into juice. Scald the radishes, then the shrimps.
  2. Sculpt the radishes into the heads and feathers of 2 mandarin ducks, knife the egg cakes into willow leaf shape, form them 2 mandarin ducks in a dish.
  3. Sculp the white radish into a lotus root, form the black moss the root hair, place them together with some shrimps in a large dish, pour a coat of agar juice on them to fix the shape. knife the cucumber into water weeds and place them together with some shrimps on the first agar juice coat, then pour the second coat of agar juice, place the mandarin ducks, some shrimps and the lotus leaves sculpted in water melon peel on the second coat of agar, finally, pour the third coat of agar juice on to fix the shape.
