Braised eel pieces




INGREDIENTS

1 living river eel, rice wine, soy, sugar, ginger juice

RECIPE

  1. Make a cut at the neck of the eel and another cut at its anus, insert 2 chopsticks in the cut at the neck, remove its intestines.
  2. After showering the eel with boiling water, wipe off its mucus, clean it with its skin unbroken.
  3. Cut off the head and minor parts at the tail, then cut it into pieces 5.5 cm long.
  4. Fry the eel pieces in heated oil, put in rice wine, soy, sugar, juice of ginger, then braise them in water for 45 minutes, when the water is concentrated, pour done oil in, place them in a dish.
